Paulie Gee’s Soul City Serves Up Incredible Slices of Pizza in Philly
Inside Paulie Gee’s
Paulie Gee’s Soul City Slice Shop is Philadelphia’s newest pizzeria. It features a laid back vibe with loud music playing, a bar, pool table, and a slice counter to rival any in New York! After stopping by nearby Dirty Frank’s Bar for some refreshments and realizing that the new Paulie Gee’s was just across the street, my friends and I decided we needed to try it out.
The slice window was stocked with a wonderful variety of round and square pizzas with various toppings on them. I wanted to try one of each because everything looked fantastic, but my buddies and I opted for a large pie with half cup n char pepperoni. I put in my order with the friendly guy at the pizza counter and he said it would be just a couple minutes. I wasn’t sure what that meant, but I observed them making my pizza immediately and got it right in the oven. It was ready in no time!
The Pizza Review
The pizza came out piping hot and looked incredible. The crust was thin, crispy, foldable, and had a deep, golden brown cornicione with come light charring. The sauce that was visible was a vibrant and bold red that was covered by the perfectly melted mozzarella cheese which was gooey in some areas and lightly charred in others. It was really everything you would want to see in a classic New York style pizza – except we were in Philly!
The crust was tender, crispy, and super flavorful. It was cooked so beautifully. The sauce was smooth, lightly seasoned, and allowed the natural tomato flavor shine. The cheese was really high quality, flavorful, added a little saltiness to the equation and really held the whole pizza together. I couldn’t think of a single thing that I would do to improve this slice. It was simple, elegant, and flawlessly executed. A wonderfully memorable pizza that I can’t wait to get my hands on again soon!
