It’s a classic Poconos neighborhood Italian setup — open seven days a week, family-friendly, lunch through dinner, with a menu that goes way beyond pizza into hot subs, hoagies, pasta, wings, calzones, and stromboli.
When I walked in, the slice counter was fully stocked with fresh-looking pizzas of each of the three styles I’d been hearing about: New York, Grandma, and Sicilian. So I did the only reasonable thing — I ordered one of each.
A Quick Pizzaiolo Confession Before We Get Into the Slices

- Razor-thin crust — one of the thinnest Grandma slices I’ve ever reviewed. Most Grandmas in the region lean thicker and breadier; Brother’s goes the other way and lets the toppings do the talking.
- A sharp, Detroit-style “frico” edge — except made of dough. This is the detail that genuinely surprised me. The edge crust was pressed sharply against the side of the pan, creating this razor-sharp thin edge that’s reminiscent of the crispy cheese frico edge on a great Detroit style pizza — but made of crispy dough instead of crispy cheese. That’s a stylistic move I haven’t seen from many NEPA Grandma shops, and it adds a satisfying texture contrast to the slice.
- Sauce on top is the star. The sauce was succulent, slightly chunky, bursting with fresh flavor, super lively, and so satisfying — and because Brother’s puts the sauce on top of the cheese on this Grandma (the traditional Grandma move), the sauce shines bright and lively without anything muting it.
- Generous mozzarella underneath — still in line with the Brother’s “give you your money’s worth” cheese application
- Fresh basil baked on top with EVOO — classic finishing touches, and they bring the slice home
This was the slice where everything was hitting beautifully, with great contrast and every element working together. If you’re going to Brother’s Pizzeria for the first time, the Grandma is the order. Sicilian Slice

The Sicilian leaned dense and quite filling — pretty different in character from the razor-thin Grandma. There’s a substantial pan-crust foundation, and as with the other two slices, Brother’s piles on the cheese generously on top. With the dense dough and the heavy cheese, the sauce didn’t get much room in the flavor balance, but there was a light crisp on the bottom and the slice eats like exactly what a hearty pan Sicilian is supposed to eat like.

I’d love to see what this Grandma looks like fresh out of the oven on the next visit.
- The dough stretching on the NY slice is clean and skilled. Even, even, even. That’s not nothing — uneven dough stretching is one of the most common tells of a less-experienced kitchen, and Brother’s does not have that problem.
- The reheat was a beat too quick on this visit. This is partially on me (see the confession above), but it’s also worth noting that a couple extra minutes on the brick would push these slices noticeably higher. The slices are good. With a slightly longer reheat, they’d be even better.
