Gio’s Pizza Co. Expands to Dickson City After Their New Haven Style Apizza Goes Viral!

Gio’s Pizza Co. first opened a couple of years ago in Clarks Summit, PA, tucked into the Gerrity’s Plaza. From day one, they offered something different for the region—a thin and crispy New York-style pizza, baked well-done with a bit more char than what you typically find in Northeastern Pennsylvania. It was the kind of pizza you’d expect to see in New York, New Haven, or Philadelphia—not the 570.

Things started off quietly, but word began to spread. Gio’s built a small, devoted following thanks to their distinct style, which featured premium flour, long-fermented dough, and high-quality cheese and tomatoes.

Then, owner John Thompson decided to shake things up.

He entered Bar Pazzo’s annual “Big Monday” pizza competition—a local showdown featuring some of the region’s top chefs—and brought with him a new creation: a New Haven Style Apizza. After multiple rounds of competition, audience voting, and formal judging, John’s Apizza took home the top prize. From that moment on, locals couldn’t get enough—they had to try it.

So what exactly is New Haven Style Apizza?

While most people picture a charred pizza baked in a coal-fired oven like those at Frank Pepe’s or Sally’s in New Haven, CT, the truth is a little more flexible. Apizza can also be found baked in gas, wood, or even oil-fired ovens—like at Modern Apizza. The style generally features a thin, chewy crust with high hydration and long fermentation, creating a unique texture and deep flavor. It’s typically served whole, irregularly shaped, and cut into small, uneven slices. Think somewhere between a thin crust New York round and a Neapolitan, but with its own attitude and unmistakable char.

Before introducing the Apizza, Gio’s had already expanded to Rehoboth Beach, DE. Their newest opening in Dickson City—located next to the former Primanti Bros.—brings their total to three locations. Having already reviewed the New Haven Apizza at the Clarks Summit spot, I wanted to check out something different at the new Dickson City shop. Turns out, each location has its own unique offerings.

The Sourdough Stallion

One of the standouts that I had to try is something called the Sourdough Stallion—a thick, Sicilian-inspired pizza that’s light as a feather and shatteringly crisp. The dough is long-fermented, not just for flavor and texture, but also for digestibility. It starts with a base layer of vibrant Stanislaus tomato sauce and goes through a first bake. Then, it’s pulled from the oven and topped with a blend of cheeses, house-made Italian sausage, hot cherry peppers, a bit more sauce, and a final kiss of cheese before the second bake.

The end result? A masterpiece.

It’s impossibly light and crunchy, smothered in rich cheese and zesty sauce, balanced by the savory, meaty sausage and the heat of those fiery cherry peppers. This pizza is absolutely outstanding—and truly unlike anything else I’ve found in Northeastern Pennsylvania. The crust had a gorgeous char, and the bottom was a deep, golden brown that would make any pizza lover swoon.
