III Guys and Their Amazing Staff Provides an Incredible Dining Experience!

NEPA Pizza Review tries both the Regular Round and Sicilian pizzas at III Guys Pizza in Dallas, PA.
III Guys Pizza in Dallas quickly moved up my list of places to try after they made my list of Best Decks and Patios in NEPA and Best Pan Fried Siclians in NEPA based on readers’ recommendations.  Couple that with the fact that I’ve heard nothing but good things about the multiple III Guys locations over the years, this was a must visit!  The First Family of NEPA Pizza packed up the Pizza Mobile and made the trek to Dallas.  As we pulled up to the restaurant, we spotted the large deck overlooking the adjacent road.  My daughter, the Pizza Princess, decided she wanted to eat on the deck and I crossed my fingers that they would have a table available on a busy and beautiful night.  They did, and the friendly staff helped us find just the right table that would comfortably accommodate the Pizza Prince’s booster seat!

So I came to review the Sicilian Pizza, but III Guys’ menu proudly boasted that their “Famous Brick Oven Pizza” has been made since 1974, and that “all of their dough is made fresh daily in-house.”  They also take the unprecedented step to let you know that they use a blend of cheddar and whole-milk mozzarella cheeses!  If they were confident enough in their product to post 33% of their ingredients at the top of their menu, I had to add it to the order.  Of course, I also ordered the Sicilian Pizza that I came for and the Pizza Princess wanted to do her own review so ordered a personal 10″ Margherita pizza.  All of this was way too much food for the first family of NEPA Pizza, but it was #PizzaFriday and we were banking on it being good and enjoying leftovers all weekend!

I have to say, that regardless of how the pizza review went, III Guys was going to be a place we returned to because the staff was absolutely incredible and the restaurant was awesome.  The staff was friendly, helpful, and personable.  Interestingly, the customers were the same way and we made some new friends just chatting between tables!  We placed our order with our wonderful waitress and sat back and enjoyed the atmosphere on the patio.  It was lively and fun and before we knew it, there were 3 pizzas on our table and it was time to get to work!  First, check out the pizza princess’s review of the Margherita Pizza by clicking the video below: 


As you can see, the Pizza Princess had some rave reviews for the personal Margherita pizza!  I tried the “Regular Round” pizza first.  The simplistic name of “regular” on the menu just didn’t seem to do the pizza a disservice because it looked so beautiful on the high-top table before me and seemed to be a least a little more deserving than the term “regular!”  The cheese had a wonderful color variation from soft yellows to deep tans and oranges.  You could tell that there was a sauce swirl underneath the cheese because of the pattern in which the cheese cooked.  Usually, I like my sauce spread evenly, but here it provided the flavor variation that I always look for.  The sauce had a sweetness and a ton of flavor to it and really was the focal point of the pizza.  III Guys tells you what the cheese blend is, but I can see why they keep their sauce recipe a secret, because it’s somewhat unique and extremely tasty.

The sauce flavor and texture and really the entire pizza reminded me of a pizzeria which I worked at for the better part of a decade – Dino and Francesco’s in Clarks Summit.  The crust was soft and pretty tender with a pleasant chew and had a light crispness on the bottom.  The more dense makeup of the dough creates a pizza that has a long shelf life and I always like to point this out for people who want pizza for parties because they need to sit for a while and this pizza will hold up.  There also is no doubt that this pizza will be popular with a very wide segment of the population because it’s not too sweet, has some classic saltiness, is neutral enough for kids, but packs some flavor and complexity for pizza snobs as well.  Overall, this pizza was wonderfully designed and beautifully executed in the kitchen.

The Sicilian, which is cooked in peanut oil also looked fantastic.  It came in a unique 5-cut half tray with long, narrow slices.  The bright white cheese contrasted nicely with the bright red sauce.  Of course, I ordered this pizza with onions to go underneath the cheese to cook some additional flavor into the sauce.  The sauce was slightly chunky with a light sweetness to it.  The focal point of this pizza was the fried Sicilian crust.  This particular crust was a bit different from the puffy pan fried Sicilians with big air pockets and significant texture variation, because it was fairly dense and uniform – more like a sponge.  Obviously this was a whole different dough proofing process and recipe than say Victory Pig or Pizza Perfect, but being unique is always a good thing!

The crust had a light crispness to it, but was mostly pillowy and soft.  It was tender and had neutral flavorings except the distinct peanut oil taste on the edges which was the best part.  Overall, I enjoyed the Sicilian very much but if I had to take my pick, I prefer the good old “Regular Round” pizza.  I’d like to call it something more spectacular, but after reflection maybe Regular is just right.  This pizza will be enjoyed by regular people, all people, and most of us would probably agree that this is a really really good pizza that the average person would enjoy.  So upon further review, I wouldn’t suggest changing a thing!  You do You III Guys because you do it well!  Thank you for a wonderful experience and very good pizza.  The First Family of NEPA Pizza can’t wait to see you again!  Have you been at any of the III Guys locations?  What was your experience?  Thoughts on the pizza?  Let me know in the comments!
