1.  Add 1 tbsp of Extra virgin olive oil, 2 tbsp of butter, pancetta, chopped garlic, and chopped onion in a medium saucepan over medium/high heat.  Sautee until pancetta begins to brown and onions are translucent.
2.  Add the entire can of crushed tomatoes, stir, and heat over medium high heat until mixture begins to simmer.  Reduce to medium/low heat and allow to simmer for 3-5 minutes.

3. Add Vodka and cook for 3-5 minutes until there is no detectable smell or taste of alcohol.3.  Stir in 1 cup of heavy cream and reduce heat to low.  Stir frequently for 5 minutes.
4.  Using an immersion blender (either directly in the saucepan or a separate bowl) blend until smooth.  If you don’t have an immersion blender, a traditional blender or food processor will work too.
5.  Put the smooth sauce back on the stovetop over low heat.
6.  Stir in 1/4 cup of parmesan cheese and continue to stir over low heat for 3-5 minutes until sauce is thick and smooth.

This type of crispy crust is easily achieved using Lloyd Pans and a healthy coating of lard, shortening, or even butter!

Vodka Pizza Recipe

These mesurements will create a 12″ round pan pizza.  Adjust for the size pan you’re using and taste preference.

Ingredients:

🍕 1 1/2 Cups Vodka Sauce (see above)
🍕 10 ounces of pizza dough (I recommend the Pizza Bible Dough Recipe)
🍕 1/4 lb Brick Cheese
🍕 1/4 lb Mozzarella Cheese
🍕 1/4 lb Provolone Cheese
🍕 1/4 lb Fresh Mozzarella Cheese (optional)
🍕 1/8 cup parmesan cheese
🍕 Granulated garlic
🍕 Fresh Parsley to garnish

1. Press pizza dough evenly with a slightly raised edge into a liberally greased pan (I like to use lard or crisco).
2.  Cover pan with plastic wrap and allow dough to rise for at least one to three hours at room temperature.  This will help provide a fluffy and tender base for the pizza.
3.  Preheat oven to 500 degrees.  If using a baking stone, preheat for at least 1 hour.
3.  Uncover pizza dough and cover dough with the mixture of brick, mozzarella, and provolone cheeses.  Sprinkle some granulated garlic on top of cheese.
4.  Bake for approximately 4 to 6 minutes until cheese melts, crust begins to brown, and the crust can maintain it’s structure.  Remove from oven.
5.  Apply an additional light sprinkling of the cheese mixture along with some parmesan cheese.  This extra layer helps the vodka sauce to adhere to the base.
6.  Apply a liberal layer of vodka sauce to the pizza, covering the whole pizza except a 1″ ring around the outer crust.
7.  <<OPTIONAL>> Add slices of fresh mozzarella cheese on top of the vodka sauce.
8.  Bake for 3 to 5 minutes until crust is golden brown and vodka sauce is steaming and has reduced a bit.
9.  Finish by sprinkling parmesan cheese and fresh parsley on top.
10. Enjoy!
